Christmas Present for Hubby

I am very excited about one of the gifts I got my hubby for Christmas!!!  So very excited about it, I am sure he's going to love it.  If he doesn't then I am going to have to take him to the doctor to have him checked out, because he may be missing his heart !!!

I tweaked this idea from pinterest, of course!  I have turned off my creativity and just allowed Pinterest to be my new muse.   I am writing this blog quite early so it will be posted on the 23rd because then he won't know about it until after he opens his gifts on Christmas!!! But the pin idea I am talking about is where you organize 12 dates in a year, one for each month and you give them to your significant other.  These don't have to be expensive, it could just be a walk along the river bank, or picnic in the park at dusk, or you can spend money on it, it's really up to you and it is dependent on what you enjoy to do.  The pin on Pinterest had all the ideas in a little basket in separate envelopes which were cute.  I couldn't find the envelopes so I bought a calendar.  I circled the dates of the date if they had a specific date, or a group of dates or I left a note for him to pick the date.  I even wrote out cute little messages on each month, some were directed at places I would like to go with him and some were just love notes.

I think it will be a traditional gift that he will get because it is definitely something that will give all year long and beyond.  It's a wonderful present.  Here are some of the things we are going to be doing in 2012!!

Christmas Baking

I am into baking cupcakes right now.  I enjoy baking a variety of cupcakes and have been experimenting with icing them.  That being said, here is one of my favourite recipes for cupcakes at the moment.

I will not take credit for creating this recipe, I got it form Allrecipes.com.  I had found this recipe before but I had lost it.  So now I have mastered this recipe, except sometimes I take a short cut.  Instead of making it all from scratch I use a chocolate cake mix to do the black bottom part.  So I will make the cake mix and the cheesecake portion at the same time.

The next step is to add the cake mix to the muffin cups, then scooping in some of the cheesecake filling.

Because I use the cake box  mix I always have more chocolate cake then cheesecake so the chocolate cake actually rises up and covers the cheesecake, giving you a cheesecake center to your cupcakes.

Finally, I ice these cupcakes with a cream cheese icing.  It is so good and easy to make.  It took me 50 minutes from start to finish, with 20 minutes for two sets of baking.

Poultry Show

I had a long weekend this past weekend.

There was a Poultry show in town and my friend Tamara and I were set up with our Fifth Avenue Collection selling our jewelry there.  It wasn't a bad weekend for Tamara but I didn't do to well, I just about covered the cost of the booth, but I had a few outside orders, that made up for the lack of sales at the Event.

Now about the event, I have an irrational fear of birds.  Their flapping wings and sharp claws and pointy beaks freak me out.  Yet I found myself at this show working, and eventually tuning out the loud caws of the birds.  It's amazing the amount of noise you can train yourself to block out after a period of time.

Did you know that their are a lot of varieties of Chickens, not just the brown egg chickens, white egg chickens and roosters?  Yup there are white chickens, brown chickens, golden chickens, black and white chickens, chickens with red heads on their heads and black bodies, and many more.  There were also pigeons at this show, and there are apparently hundreds of varieties of pigeons, and some of the top graded pigeons can sell for $15,000!!!!!  I was blown away,  because I wouldn't be able to tell the difference between a street pigeon and a pet pigeon.

It was a very informative weekend, and I will take this information with me when I go to buy my acreage in the future and I am looking to stock up with chickens for laying eggs.  I don't think I will be showing them.  Although one little girl told me that silkies (really fluffy looking chickens) can be trained to be house pets and you can walk them on leashes?!?!?

Christmas Balls

Welcome to another Pinterest Project Blog.  I cannot even begin to tell you how much I am in love with that site, but I am guessing you are starting to realize, especially if you are a regular reader of  my blog.

I am always looking for new ways to use old decorations, or decorate the house differently for Christmas.  I have a secret desire to have three to five separate themes for decorating my house at Christmas, in fact I kind of feel that way for all seasons.  What prevents me from doing it that now?  Well a few things, $$$ is a big one, sentimental reasons for another and third I am not always that creative, but I try.  While perusing Pinterest I noticed a pin of a person hanging the Ball Ornaments from string in front of their windows.  It peaked my interest then my friend Becky did it and I really liked how it looked so I looked into doing at the house.

I love Black Friday sales, and I went to Canadian tire and bought a few supplies.  It's simplicity to create window hanging balls.  All you need is string, and large Christmas balls and something to attach them to.

For a total of $15 I was able to make 12 Christmas hanging balls for my windows and they look great.  Now I have some ornaments that have not gone on the tree so I am going to make them into hanging balls as well to  hang around the house.  I love they way they look!!!!

Creamy Chicken Enchilada

Have I told you how much I love Pinterest???  I am seriously in love with that site, it has opened up the Internet to me in so many new ways that I am finding it hard to fit all my creative ideas into my days.  Seriously, I want to try everything I pin, but I struggle with finding time to do it all.  But I always find time for new recipes.

While on Pinterest, this Chicken Enchilada recipe kept popping up, it was very popular, pinners were saying it was the best creamy chicken enchilada recipe around.  I never pinned it but I meant to, I just kept saying,"Oh, I'll pin that later," or, "I wonder how hard this recipe is?"  Then the other day I decided to answer one of the questions, I decided to click on the photo and check out the recipe.

It is an 8 ingredient recipe with 4 steps to it.  SIMPLE!!! And it is so tasty, if I wasn't on a diet I may have gorged myself on it.  So last night for supper I made the Chicken Enchilada recipe for my family, I began at 4:15 and finished at 5:30.  It took a bit longer but I will explain that too.

So here is what I did and the recipe broken into parts.

1) I cooked up 5 chicken breasts in water and oil and spices on the stove (I use garlic, salt, pepper and dill, but you can season your chicken to taste) I put everything into a deep frying pan and let it cook on medium for 30 minutes (the was the longest part)

2) I then prepared the stuff I needed for the rest of the meal while the chicken cooked. I made Spanish Rice again as a side.  I cut up Onions, had Hubby blend tomatoes and shred the Monterrey cheese then I checked the recipe again.
                                                          Part one of Recipe
                                                     2 cups Shredded Chicken
                                                     1 cup Monterrey Cheese
                                                     6-10 Wraps ( I used whole grain)

3) I took the chicken and shredded it, or pulled it apart with two forks.  You need two cups of chicken and a cup of Monterrey cheese which you mix together.  Then you spread this into the wraps and roll them up and put them into a baking pan.
                                                          Part two of Recipe
                                                     3 tbsp butter
                                                     3 tbsp flour
                                                     2 cups Chicken Broth
                                                     1 cup sour cream
                                                     1 can diced green chillies

 4) I then melted the butter in a sauce pan.  When that was melted I added in the flour and stirred until it was well mixed.  I then added my 2 cups of chicken broth and stirred until it was bubbly and thick.  Finally, I added the Sour Cream, which you led melt in and stir but don't let it boil or your sour cream may curdle (yuck).  You add in the green chillies as well. Stir then pour over wraps in baking dish.

5) The final step is to cover with cheese in the pan and bake.  I won't say how much to use, because I like a lot of cheese but Hubby doesn't like that much so add cheese to fit your taste.  Think a lasagna covering of cheese.  You then bake this dish at 350 degrees for 22 minutes then put it on Broil for 3 minutes.  Take it out and serve!!!

Such a yummy supper.  The reason it took me an hour and 45 minutes to prepare is not because it takes that long, but because I had to cook my rice as well which takes some time and I was making everything up from start.

This would be a great recipe to use left over chicken or turkey.  All you would have to do would be to shred the left over meat add it to a wrap, prepare the sauce and bake.

So if you want please make this recipe it is so great I LOVED it!!!

After School Snack

Most of you who read my blog regularly (*blush* when I post regularly, I know my bad *blush*) will see a common thread in many of my posts lately, it's the inspiration behind them, coming from Pinterest.  If you haven't discovered this site, you need to, or you check out Stumbleupon as well, it's pretty cool.

Anyways I digress, I have found a new love for the Pillsbury Crescent rolls.  I was never much of a fan of the Pillsbury baking products but after discovering these ideas I am hooked!!!  It's just taking the crescent rolls and adding different ingredients to them to create great after school snacks or meals on the go.

So far I have added hotdogs to the crescent rolls (Lil man's second birthday), pizza sauce pepperoni and cheese, and peanut butter and chocolate chips.  Not all at one time but on three separate occasions.  I enjoyed the pizza ones, but Chan LOVED the peanut butter and chocolate chip ones.

These are the peanut butter chocolate chip ones!! yum
Seriously, these are the easiest snacks.  Just open up the crescent rolls and spread the rolls out on a cookie sheet.  Add your ingredients then roll the crescent roll up.  Bake for 10-15 minutes and serve!!  Voila a great snack!!!!

Lil Man's Second Birthday

Some days it seems amazing to me that my Lil Man has been with us for 2 years now.  He is such a delightful little guy (contrary to what that crazy lady thought in Lacombe), his personality is becoming more and more developed each day.  He knows what he wants, he is stubborn, he is funny, he is caring, he is compassionate, he is very intelligent and he is ours.  We love him to bits!!!

So this year we just had a birthday party at the house.  His friends Mason, Gracie, Izzy and Parker all came over as well as Cohen and Caleb who are both little babies, I am sure they will be more active next year.  We did crafts with the kids first, for those kids who were big enough to participate, then we opened presents, then we had food and cake.

I made mummy hot dogs and pig and puppy cupcakes.  It was a lot of fun and thank you to Pinterest again for the great idea!!!  The cupcakes were super easy to make.

I made pumpkin cupcakes the same from Thanksgiving, then I made red and brown icing.  I iced the cupcakes and added marshmallows and cut up wafer cookies and chocolate chips.  They turned out fantastically!!!
