Cinnamon Swirl Pancakes

Did you know I love Breakfast?? I am seriously in love with all breakfast meals, and if I can eat them all day long I totally would. So I found this recipe for Cinnamon Swirl Pancakes on, you guessed it, Pinterest and I decided to try them one morning. I used a box mix to make my pancake batter, I can make them from scratch, but Lil Man and Prince T were hungry and I didn't want to prolong this, especially if they didn't turn out, so quickly mixing up a batch of "just add water" pancakes I then started with the other parts of this recipe. Making the Cinnamon swirl stuff was just yummy!! Butter, brown sugar and cinnamon, yup nothing wrong there  ( 4 tablespoons unsalted butter, melted,  ¼ cup + 2 tablespoons packed light brown sugar,  ½ tablespoon ground cinnamon) Mix them all together then put them in a ziploc sandwich bag. making a small cut in one of the corners. Recipe I am PERFECTING

Ok sorry there are no pictures for this blog, but there will be when I get the recipe PERFECT!!! I am a huge fan of guacamole.  I love guacamole, I love avocados and tomatoes and everything about it!!  When I first saw guacamole, I was very turned off by it.  I mean it was green!!!!  I disliked green foods and did not think anything green could taste good, except peas from the garden.  I wouldn't even try it, not for a dollar, not for a bet, not for anything. Then a couple years ago, I decided to try it, just because I saw some guacamole that looked appetizing. It wasn't the green spread that looked like green mayonnaise, this stuff had textures in it, you could see tomato pieces in it, and chunks of avocado.  I was intrigued, and I knew who made this stuff as I was visit my good friends the Carloses at the time.  So I picked up a chip and dipped in, it was the best and worst decision I made because after that I was hooked, I had to have the recipe...

Creamy Chicken Enchilada

Have I told you how much I love Pinterest???  I am seriously in love with that site, it has opened up the Internet to me in so many new ways that I am finding it hard to fit all my creative ideas into my days.  Seriously, I want to try everything I pin, but I struggle with finding time to do it all.  But I always find time for new recipes.  While on Pinterest, this Chicken Enchilada recipe kept popping up, it was very popular, pinners were saying it was the best creamy chicken enchilada recipe around.  I never pinned it but I meant to, I just kept saying,"Oh, I'll pin that later," or, "I wonder how hard this recipe is?"  Then the other day I decided to answer one of the questions, I decided to click on the photo and check out the recipe. It is an 8 ingredient recipe with 4 steps to it.  SIMPLE!!! And it is so tasty, if I wasn't on a diet I may have gorged myself on it.  So last night for supper I made the Chicken Enchilada recipe for my family...

Easy Crockpot Soup

If I have to cook, which since I have kids is something I find I have to do from time to time, I LOVE using my crock pot.  Whomever invented the crockpot is my hero, it seriously makes my job so easy. With the cold weather setting in, I'm craving soups.  I love making soups and eating soups and now freezing soups.  I really wouldn't mind being on a soup diet, except every once in awhile I like somthing crunchy and salty.  I think aside from that being on a liquid diet would be good for me except I might eat more than I should and gain weight since it doesn't take much energry for your body to break down liquids. The easiest soup recipe I know is Hamburger Soup.  This is quite honestly like the story of Stone Soup.  You know the fable of Stone Soup, where the family had nothing to eat so they boiled a pot of water with a stone in it. Baked Potato Soup

OMG!!! That's all I can say for that, it was so good and so tasty!!! I made Baked Potato Soup in the crockpot last week, another Pinterest idea and it turned out fabulously!!! Even Adrian liked it and sometimes he is picky about the soups he eats. I got the recipe here.   And cut it in half, with some extra potatoes.  It was easy to do and because it was in the crock pot I didn't have to stand over the stove for hours!!! Loved this one!!!

Sunday Morning Brunch Idea

So I tried a new recipe out on Sunday.  It seemed like a pretty neat idea when I read about it on Pinterest so I thought what the heck let's try it. I really enjoyed it.  I took eggs and milk and mixed them together like scrambled eggs. Then I sprayed my muffin tins with cooking spray and lined them with Maple Turkey Breast.  I did it so the meat formed a cup like a muffin cup. Next I poured the egg into the turkey meat and then I added tomatoes and onions and cheese to top. Finally I baked them in the oven for 30 minutes pulled them out and served.  It was a great 40 min recipe with cooking time.  Perfect for busy mornings because they were great reheated as well!!! I suggest this for a change from regular egg breakfasts, you could use any meat, ham, chicken, which ever and any omelet additions as well.

What's for supper??

Adrian called me tonight saying he was going out to do some work with Danny, which told me he would be out late and I would be making supper. Since I have started my six week challenge again I knew I would have to cook something for supper and it couldn't just be processed food that would be no good.  So I came home and tried to figure out what to make. There wasn't a whole lot around, I decided I wanted some rice so that took care of the side dish of my meal, but what to serve with it.  We hadn't done a big shopping trip so the fridge was a little bare on veggies, so I couldn't do up a stir fry and I didn't even have any stir fry meat.  I had a steak (a single steak), pork ribs, pork chops, hamburger and ground turkey in the freezer.  I was feeling hungry so the ribs were out.  I like to slow roast my ribs so the meat just falls off the bone.  So that left me few options.
